Today is Shrove Tuesday and all in all I’ve had a bit of a bad day….well, a grumpy day rather than a day where everything goes completely wrong! I think everyone deserves to have a grumpy day from time to time….maybe Im completely unjustified in thinking this but oh well!
Anyway, the prospect of having pancakes this evening definitely lightened my mood….until I remembered that I’m trying to shift a pound or two (or three….or four…etc!) at the moment and I knew I would feel a bit guilty if I over indulged during the week. That is, I thought I would feel guilty until I found a recipe on www.weightlossresources.co.uk.
The website’s recipe served 10 but as there is only Mr MAC and I, I halved it.
Low Fat Pancakes
Serves 5
56g plain white flour
1 egg
105ml skimmed milk
45ml water
Frylight

Combine the milk and water

Sift the flour into a bowl

Make a well in the middle of the flour and break in the egg

Begin whisking the eggs mixing in the flour as you go

Add the milk and water bit by bit until all the liquid has been added and you have a smooth batter

Spray a small frying pan with frylight

Heat the pan on a high heat until hot then reduce to medium heat

Add 2 tbsp of batter to a ladle and drop into the middle of the pan tipping from side to side evenly coating the pan.

When the edges have become loose and the batter has solidified, flip over.

Cook the second side for a few seconds until golden.
The above recipe worked really well; the pancakes were very tasty and most importantly the recipe was fairly low in fat due to the omission of any butter. My first one was with sweetener and lemon juice and my second was with a tsp of chocolate sauce, raspberries, a sprinkling of sweetener and a few chocolate flakes. YUMMY!
P.S – I must be honest and admit that this is the second batch of pancakes we attempted…..the first batch did not go so well and was to a slightly different recipe. In fact, the first batch resulted in my throwing down my ladle in a strop and proclaiming “Well I didn’t want pancakes anyway!!!!”…I wasn’t lying when I said I was having a grumpy day!
