One of my favourite comfort food recipes is ‘Sausage and Bean Casserole’; it is one of Mr MAC’s specialities and my favourite mid-week meal. Not only is it quick to do, it also uses store cupboard ingredients and is fairly healthy so I feel no guilt at all at digging in!
Sausage and Bean Casserole
Pack of Linda McCartney Sausages
Red Onion, sliced
2 tbsp chilli powder
A few drops Tabasco
2 cans of baked beans
1 can kidney beans
1 can chopped tomatoes
Cook the sausages in a frying pan then remove from the pan and cut each sausage into four pieces.
Using the same frying pan, cook the red onion in the chilli powder for a few minutes
Add all ingredients to a large casserole dish, stir and place in the oven
Cook for half an hour at 180 degrees
So quick and easy! We like spice so we normally put more tabasco in but play around with it, it’s an easy recipe to adapt. Sometimes we add paprika, Neil has even tossed a few carrots and mushrooms into the mix and on one occasion, parsnips (these didn’t work so well but don’t tell Neil I said so!). A lovely recipe for cold, lazy winter days.
