Salads should not be boring! I cannot stand it when I go out for a bite to eat, order a salad and it only consists of some wilted iceberg lettuce, a manky old tomato and maybe a slice of cucumber if you are lucky! No wonder us British aren’t bigger salad eaters. I think the American’s have got it right. Over in the states you can order some of the most amazing and delicious salads; many of them are very healthy and good for you but really appealing at the same time!
Above is a salad I threw together yesterday. I may be pretty sad but I find it important that my food is not just one colour…I like it to be nice and colourful and look really tasty. The salad above contained leftover roast beef (a little raw for most I know!), roast potatoes, parsnips and carrots, red onion, sweetcorn, orange pepper and tomatoes. YUM (not to mention filling!).
Please make your salads nice and interesting – I promise you wont regret it. Banish Iceberg lettuce for all eternity…….rant over!!!
