I have read lots of excellent posts in honour of St Patrick’s Day today so I thought that I would jump on the bandwagon and do one too! This recipe is an Irish inspired Bailey’s Chocolate Cheesecake….really delicious and involves no cooking – easy peasy! I haven’t made this in a while so I’m afraid there’s no photo but I promise you it looks good and really is worth trying.
Bailey’s Chocolate Cheesecake
250g crushed double chocolate chip cookies
600g cream cheese
25ml Bailey’s Irish Cream
100g icing sugar
300ml whipped double cream
100g grated chocolate
In a medium saucepan, melt the butter. Add the crushed biscuits and mix well.
Press the biscuit mixture into the bottom of an 18cm springform tin and leave to set in the fridge for an hour.
Whip the cream cheese then beat in the Bailey’s and icing sugar.
Fold in the whipped cream and grated chocolate into the mix.
Once the cream cheese mixture is smooth, spread onto the base and chill for 2 hours.
Dust with cocoa powder or decorate with chocolate shavings before serving.
