I decided that tonight we would have a chilled out dinner which involved very little preparation and cooking. I have wanted to go on a picnic for so long however, the British weather has prevented Mr MAC and I from using the gorgeous picnic hamper he bought me for my birthday last year. The obvious solution to both issues? An impromptu picnic in the living room!
We feasted on;
Local Honey roast ham
Slices of mature cheddar from the fantastic St Giles Cheese
Spring onions
Cherry tomatoes on the vine
Roasted vegetables and couscous with lettuce (red onion, sweet potato, courgette, peppers, onions)
Oils and vinegars (Aged balsamic, garlic and chilli oil, strawberry balsamic)
Red onion chutney from the Pickled Village
Baked Camembert (studded with rosemary and smoked garlic and drizzled with oil)
Homemade bread (Rustic parmesan, sun-dried tomato, caramelised onion and rosemary loaf)
Moroccan hummus
Onion and chive dip
Grapes
Pretzels
Low fat victoria sponge (recipe to follow on another blog!)
This is my favourite type of meal – lots of yummy dishes I can pick and chose at; a lot of which have come from local producers and suppliers. I am stuffed now though!!
Sometimes, it is vital to just sit back, relax and appreciate all of the gorgeous, tasty food that is so easily accessible to you. We are really very fortunate.
